        Since he created Milk Street in 2016, Kimball has offered a constant stream of culinary media content. This latest collection is a departure, with a columned layout that packs in recipes, tips, and photos for an encyclopedic feel akin to The Joy of Cooking and the How to Cook Everything series, but with photos. Milk Street's unofficial motto, "Change the way you cook," is present throughout, in advice and technique explanations, making this book as much about instruction as it is about the dishes themselves. Recipes are varied in style, flavor, and complexity and include plenty of vegetarian options. A final chapter of sauces, salsas, and pickles will be a condiment lover's dream, with endless dipping and dressing potential. The organization is the same as previous Milk Street books, with two tables of contents (main and chapter) that make it easy to revisit favorites. Fans will notice repeats from the website but will likely welcome them for the first time in print. The comprehensive nature of this collection will provide an all-in-one for fans and is guaranteed to be a hit.

The focus of the book is on the savory side of cooking, with recipes for everything from salads to burgers and sandwiches. Viewers of Milk Street's popular PBS cooking show of the same name will recognize some of the recipes offered, including their game-changing recipe for fettuccine alfredo. Along with the recipes are tips and techniques for shaking up one's cooking methods, including using acids in cooking, correctly blanching vegetables, knowing which knives are necessary, and five secrets to world class pizza. Building-block recipes for things like homemade mayonnaise are also included, and even a tried-and-true old standby like slow-roasted tomatoes gets a Milk Street twist--add some tomato paste to boost the rich tomato flavor--that sets it apart from its competitors.
